BBQ'd Chuck Roast with Vegetables

4 pounds chuck roast
1 teaspoon salt
pepper -- to taste
3 teaspoons flour
olive oil
1/2 teaspoon dry mustard
3/4 cup catsup
1 1/2 teaspoons worcestershire sauce
1 tablespoon vinegar
2 stalks celery -- sliced
2 large carrots -- sliced
1 medium onion
heavy aluminum foil

Heat olive oil in heavy pan. Sprinkle meat with salt & pepper and flour, brown.

Mix the rest of the ingredients. Pour 1/2 sauce on large piece of foil. Place meat on sauce, top with remaining sauce and vegetables. Seal foil. Roast 350 F for 2 hours or until tender.
